Traceability and Mock Recall for a Cheese Factory

A supplier notifies you that a certain rennet lot has a problem. How many cheese batches used it? Who did you sell it to? How much is left in the cold store? In Lebnara you type the lot number and the full answer appears in seconds, and you print it or save it as a recall exercise for your quality record.

Forward trace: from material to customer

  • Search by our lot number or the supplier lot number printed on the pack.
  • The production batches that actually consumed from this lot appear (by real FEFO issuing, not estimates), along with ricotta batches made from their whey.
  • Then every sales invoice: customer, phone number, product, quantity, date and invoice number.
  • Plus quantities transferred to points of sale, and what remains in stock that must stop selling immediately.

Backward trace: from a cheese batch to its sources

Search by production batch number and you see the raw materials that went into it with their lots, suppliers and expiry, the milk source (the supplier or the milk tank the chef drew from), then the same forward path to customers.

A recall exercise saved with its time

Food safety systems such as HACCP and ISO 22000 require a periodic recall exercise proving you can identify the affected product and its customers quickly. The software measures the search time in seconds, saves the exercise with the result and who ran it, and you can print the report.

Built on real data, not estimates

  • Every material receipt is a lot with a number and expiry.
  • Every consumption in production is drawn from specific lots and recorded.
  • Every sale, return and transfer of finished product is recorded against its batch and location.
  • A mandatory corrective action in the Chef Board when any critical control point is exceeded, shown on the batch's HACCP sheet.

Frequently asked questions

How long does a recall exercise take?
The search itself takes seconds. The software saves the actual duration with each exercise so you can present it to a quality auditor.
Is the supplier lot number enough?
Yes. You can search by our lot number or by the supplier lot number recorded at receipt.
What about old sales before lots were enabled?
Sales linked to a production batch appear too. Materials received before lots were enabled cannot be traced by supplier lot number.
Is it included in the subscription?
Yes, within the cheese factory module ($20 per month), with inventory and the Chef Board.
